I did not know how to call this normal chocolate cake with ganache frosting used for that stuff. Then, considering the three preparations of chocolate, I decided to call it that.

Ingredients for the chocolate cake


6 eggs 3 tablespoons unsweetened cocoa

250 g sugar 125 g butter 125

flour 3 tablespoons potato starch
1 / 2 tablespoon baking

Ingredients for ganache

1 / 2 liter of fresh cream 400 g dark chocolate


I usually use dark chocolate melted in a water bath and united to the body, because it is higher, but this time, considering the amount of total caloric tortifero, I opted for the cocoa.

So, since you have to make a good part of the ganache to cool, prepare the first thing: Put the cream in a saucepan and melt the chocolate in pieces, trying not to attack (ie turn), then bring to a boil for a few minutes and turn. At the ganache should be added, usually a bit 'of liquor for flavor, but I prefer without.

Divide the mixture into two: one part leave even on the stove (turned off), stirring occasionally, allow to cool the other hand, even in the fridge. And this is an important moment, otherwise problems may occur with the filling.

For the base, separate the yolks from the whites (who are whites) and knead it with sugar. Add the cocoa and butter, mixing well the mixture. Gradually add the flour and potato starch. Finally the egg whites and baking powder. Now, baking is not necessary, because the egg whites should bring enough air, but the dough is quite heavy and I prefer a high base to be stuffed.

Bake for 30 min. 180 degrees in a mold (I use to those who are comfortable opening circle) buttered and floured, then remove from oven and cool.

In the meantime, take the left portion of ganache in the fridge and put it until it becomes clearer. Open the cake in half and fill with this cream. Close ganache and use the part of "unfinished" for frosting the cake.
