250 g sugar 125 g butter 125

flour 3 tablespoons potato starch
1 / 2 tablespoon baking

Ingredients for ganache

1 / 2 liter of fresh cream 400 g dark chocolate


I usually use dark chocolate melted in a water bath and united to the body, because it is higher, but this time, considering the amount of total caloric tortifero, I opted for the cocoa.

So, since you have to make a good part of the ganache to cool, prepare the first thing: Put the cream in a saucepan and melt the chocolate in pieces, trying not to attack (ie turn), then bring to a boil for a few minutes and turn.
